yield 15 servings
2 cups all- purpose flour
1-1/2 cups sugar
1/2 cup( 1 Stick) cold unsalted Butter
1 teaspoon baking powder
1 cup milk
2 eggs, separated
2 cups fresh blueberries
In a mixing bowl, combine flour and sugar. Cut in butter until crumbly( I cut in butter and mixed all together with my hands). Set aside 3/4 cup for topping. Add the baking powder, milk and egg yolks to remaining mixture; mix well( I used wooden spoon). Beat egg whites with mixer until soft peaks form ( just a few min until not runny) ; fold in to batter..
Pour into a greased 13-in. - 9- inch baking dish. ( I used a round one). Sprinkle with blueberries and reserved crumb mixture. Bake at 350 for 35 min or until golden brown and a toothpick inserted comes out clean.
Came out very nice.
