Ingredients
3 large skinless boneless chicken breast cut in to medallions
Salt and pepper
2 tablespoons vegetable oil
1 clove garlic
1 cup chicken broth
1/2 lemon
1/4 cup lemon juice 1 slice of lemon
2 tablespoons capers
3 tablespoons butter
2 tablespoons minced parsley
1/2 teaspoon flour
Season chicken with salt and pepper and then cut in 1/2 inch medallion. But oil in pan and fry medallions until brown on bothe side and the meat thermometer reads 165 F. Take out of pan and keep warm. To the pan add garlic sauté 30 seconds pour in chicken broth scrape brown bits from bottom skilled. Stir in lemon slice bring to boil and then simmer for 5 min add capers simmer add flour whisk until sauce reduced and slightly thickened.
Drop butter in to skillet and swirl in to sauce, now I add lemon juice little at a time. Keep tasting the sauce add a little salt and pepper and then the parsley. Spoon sauce over medallions. I made mash potatoes and green beans. Guten Appetit 🇩🇪
