Ribboned vegetable


Serves about 4 to 5 people 

2 medium carrots
2 zucchini
2 yellow squash
1 tbsp butter
2 tsp lemon juice
1/2 salt
1/2 pepper 
Cut very thin slices down the length of each carrot, zucchini and squash with vegetable peeler. Sauté vegetables in butter in a skilet for 3 min add rest of ingredients. Cook 3 more min until crisp and tender. 
Good way to eat vegetables. Guten Appetit.
