Mango Salsa

Makes 2 cups

2 cups of Mango fresh or 2 cans Mango
1/2 cup onions, finely chopped
1/2 cup red bell pepper, finely chopped
1 jalapeno pepper, seeded and finely chopped
1 clove garlic minced
1 tbsp. cider vinegar
salt and pepper for taste

Put mango, onion, bell pepper, jalapeno, garlic and vinegar in to bowl.
Add 1 tbsp. of warm tap water and stir.
Add salt and pepper to taste
Cover and refrigerate at least 1 hour or up to 1 week before serving.
Use with the Polenta with Beans recipe or on Pork chops.  Chips be good too.
