Polenta with Black Beans







serves 6 to 8

I package polenta roll
1/2 cup vegetable stock
1/2 onion, chopped
1 red and 1 yellow pepper chopped
2 cloves garlic
1 can drained black beans
1 15 oz. crushed whole tomatoes
1 4 oz. diced green chilies
1/2 tsp red pepper flakes
1/2 tsp ground turmeric
1 dash of hot sauce add more if you like after you taste
1/2 tsp pepper
1/2 cup fresh cilantro

cook the stock, onion, peppers, and garlic in a large sauce pan
cook until soft about 5 min.
Add black beans, tomatoes, chilies, and seasonings and cook for 10 min.
Taste and add more seasoning if needed. Remove from heat and stir in cilantro.
Cut Polenta in thick slices and fry in pan until golden brown.
Arrange polenta on plate and top with black bean mixture. You can serve with Mango Salsa.
