Baked Caprese Chicken
1/2 cup balsamic vinegar
1 tbsp. olive oil
1 tsp salt
1/2 tsp pepper
4 chicken breast
4 mozzarella slices
1 tomato, slices
salt and pepper to taste
garlic powder, to taste
handful of basil, julienned
balsamic reduction, to serve. You can find it at Publix

Preheat oven to 400F
Mix together balsamic vinegar, olive oil. Season chicken with salt and pepper and put marinade and chicken in a Ziploc bag. Let sit in refrigerator 15 to 30 min. Lightly oil a baking pan and cook chicken for 30 min or until internal temperature reaches 165F. Put a slice of mozzarella and a slice of tomato on each chicken breast. Add salt, pepper and garlic powder to taste to each piece. Cook 5 more minutes or until cheese is melting. Enjoy
