Ingredients
1 tablespoon extra-virgin olive oil
2 cups roasted vegetables, such as potatoes, carrots, asparagus, zucchini and onions. Put on baking sheet cut bide size, drizzle with olive oil add salt and pepper, mixed together and bake at 425 for about 25 min until golden brown.
2 cups leftover cheeses shredded cheese, mixed it up
1/4 pound Canadian bacon
12 eggs, at room temperature
1 1/2 cups milk, at room temperature
1 teaspoon salt
1/2 teaspoon black pepper
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with the olive oil. Spread the vegetables in the bottom, then top with a layer of the cheeses, then the ham.
- Whisk together the eggs, milk, salt and pepper in a medium bowl. Pour the mixture over the layers and bake until lightly golden and the egg is set, about 50 minutes Allow the bake to sit for 5 minutes before cutting and serving.
- Use whatever vegetable you like, it is yummy. Enjoy
